BBQ Lamb Meatballs
Let's face it; we have all had underwhelming BBQ meatballs. The good news is that these are sure to break that mold. Here's an easy recipe that takes the common hors d'oeuvre to a whole new, more flavorful level.
Ingredients to make 48 meatballs:
1lb ground lamb
1 sleeve Ritz Crackers
1 egg
3/4 cup 2% milk
1 tbs minced garlic
2 tbs tomato paste
Salt & pepper to taste
Your favorite BBQ sauce
Preheat your oven to 375 degrees.
Thoroughly combine all ingredients EXCEPT the BBQ sauce in a large mixing bowl.
Using a melon baller or 1tbs measuring utinsel, portion out the desired amount of the ground lamb mixture.

Gently roll the ground lamb mixture into a small ball and place on a lightly greased baking pan (with edges)!

Bake at 375 degrees for 15 minutes. Remove the meatballs from the oven and turn them. Place back into the oven and bake for an additional 15 minutes.
Once the meatballs are browned on the outside and cooked through the center, remove them from the oven. Place the cooked meatballs onto a plate lined with papertowels so they can cool and drain off any excess grease.
Serving Option 1: Dip the lamb meatballs in your BBQ sauce.

Serving Option 2: Carefully coat each meatball in BBQ sauce.

Be sure to make plenty of extras because they will go fast!
